Limited edition rum, made from the selection and balanced mixture of exceptional barrels, from vintages that have expired in the cellar: Maestro 2009, Familia 2004 and Tradición 1998.

The result is a rum of the highest quality, balanced and sublime, where notes of raisined fruit and leather stand out on a spicy and saline background.

Specific References

Our production process follows the traditional recipe and the steps of our ancestors. It all begins in La Zafra, the sugarcane harvest period, between March and July.

Next, grinding occurs, the process of crushing and pressing the sugar cane, by which the juice or guarapo is obtained.

The guarapo, once extracted, is naturally fermented for about 30 hours and becomes Distilled, by direct heating of the guarapo and continuous distillation, in an Egrott column still, over a live fire of heather and Falla wood.

The brandy obtained is deposited in oak barrels, at a percentage of 65% alcohol for aging.

During the maturation process, the best barrels are selected and blended to result in a rum with character and balance.
